The chocolate is cold-worked and contains only cocoa and sugar, with no added fats or emulsifiers. This gives the chocolate a special grainy texture and aromatic flavor, enhanced by the addition of spices or citrus fruits. Simply unique.

The most famous shop is the Antica Dolceria Bonajuto, founded in 1880 and considered the oldest surviving chocolate factory in the region. Here artisans prepare the chocolate by hand, using traditional tools and methods, adding different flavorings such as vanilla, cinnamon, chili pepper, orange, lemon, pistachio, almond, coffee, carob or salt.


Sabadì, a modern and innovative company that produces organic, fair trade and slow-food chocolates, pays special attention to the selection and quality of raw materials. It built the world's first chocolate aging cellar, where it stores its chocolates in naturally scented wooden barrels.
